This beloved Algerian classic brings together meltingly tender chicken, bright green olives, sweet carrots, and a golden broth perfumed with turmeric, ginger, and lemon. 🛒 Ingredients (4 people)

• 4 chicken thighs or drumsticks
• 2 tbsp oil
• 1 tbsp butter
• 1 onion, finely chopped
• 2 garlic cloves, crushed
• 2 carrots, sliced into rounds
• 1 tsp turmeric
• 1 tsp ginger
• ½ tsp mild paprika
• Salt & pepper
• 150 g green olives, pitted
• A few slices of lemon (fresh or preserved)
• Fresh parsley & coriander
• Chicken broth or 500 ml hot water

🍗🔥 How to Make a Perfect Tajine Zitoun

1. Brown the chicken
In a heavy pot or cocotte, heat the oil and butter. Add the chicken and brown it on all sides until golden and fragrant.

2. Build the flavor base
Add the chopped onion and garlic. Let them soften for a few minutes, releasing their aroma.

3. Add the spices
Stir in turmeric, ginger, paprika, salt, and pepper. Everything should take on a warm, golden glow.

4. Add the vegetables
Drop in the carrot slices. They’ll soften slowly and sweeten the sauce.
