Recipe: Bresse Chicken Supreme with Cream & Truffle

Ingredients (Serves 4)

4 Bresse chicken supremes
• 200ml heavy cream
• 20g truffle oil
• 30g fresh truffle, thinly sliced
• 250g ceps (porcini mushrooms), quartered
• 100g chanterelle mushrooms
• 30g butter
• 5g flat-leaf parsley, chopped
• 50g Emmental cheese, grated
• 20g rocket salad
• 10g grilled hazelnuts, chopped
• Fine sea salt & black pepper

Instructions

1️⃣ Prepare the Chicken

Place the Bresse chicken supremes in a vacuum bag with truffle oil, cream (50ml per bag), salt, and pepper.
Seal the bag and cook sous vide at 63°C (145°F) for 1 hour.
Immediately cool in an ice bath.

2️⃣ Sauté the Mushrooms

Clean the ceps and chanterelles, then cut the ceps into quarters.
Heat a pan with butter and oil, then sauté the mushrooms separately.
Add chopped parsley, season with salt and pepper, and set aside.

3️⃣ Prepare the Garnish

Spread Emmental cheese on a baking sheet and grill until golden.
Toss rocket salad with grilled hazelnuts.

4️⃣ Final Assembly

Reheat the chicken supremes in a bain-marie.
Open the vacuum bag and reduce the sauce to a coating consistency.
Slice the chicken and plate with mushrooms, cheese crisp, and salad.
Garnish with thin truffle slices and a sprinkle of sea salt.
